I (Ash) grew up in Southern California and would get sea salt coffee at 85°C Bakery (my comfort bakery) regularly for YEARS. If you have tried it, you probably know exactly what I'm talking about. That's why it felt so fitting to remake it. After 4 years in London, there are still some things I miss, and 85 degree coffee is pretty high on that list. I take up any opportunity to have a little reminder of home with me, and as soon as I tried this after making it, it felt like I was right back in Diamond Jamboree (if you know, you know).
